Booberry cereal

OK, by the title I am sure you figured out that last night I did not succeed at eating like a grownup. I ended up eating 3 bowls of cereal. One bowl of booberry, the strawberry version of booberry and the Halloween version of Captain crunch. I think I went through sugar shock!

I did mention that this is a journey. I managed 2 meals last week that were made at home and adult like. Next week I will try for 3.

Pasta And Turkey Sausage For One.

Cook up one serving of whole wheat pasta if it is just you.

Tonight I made for the family but adjusted mine to my taste.

1/2 orange bell pepper or any bell pepper sliced
Parmesan cheese
1 turkey sausage

Toss the cooked pasta and cheese
Add the cooked sliced sweet Italian turkey sausage
Add lightly sauteed pepper (still a little crunchy/ do not over cook)
Finish of with fresh cracked pepper and sea salt

I cannot believe I ate like a grown up today.
Just separate the turkey sausage in individually wrapped packages and freeze after buying them at the store. Save the other 1/2 of the pepper for a healthy snack the next day.

The kids just had pasta and cheese with a side of fruit. They had no interest in the other things.

Mac and Cheese for one!

The kids will eat this up as well, but here is a recipe that I made just for me.
Quick mac and cheese. I love cheese. I think it should be in every meal. I know fatty but so yummy and good for your bones.

1 cup of macaroni noodles (boil)
Drain water. Toss in a handful of shredded cheddar and a handful of mozzarella. I always have cheese on hand. Use whatever cheese you have in the fridge. I splash a bit of milk in and mix.
Keep the stove on med-low.
Fresh ground salt and pepper finishes this yummy mac and Cheese.

I made up 2 slices of turkey bacon and ate it on the side. If I had real bacon, I would have for sure crumbled it and mixed it in.

Want to be healthy? Eat a piece of fruit with it.

As you can see by now, this blog is not one at giving great advice about cooking for one. I started this because I needed to learn how to cook for one. Then life gets in the way. The boys got home and it was homework, then it was time to take my daughter to tap class a 1/2 hour away. For dinner it was Burger King. Now..... I can feed all four of us under $5 no problem. The secret is that I keep juice boxes in the van. I order their meals off the value menu. I got a plain Whopper JR no mayo for $1.00. Not healthy at all, but eating salad and driving is not what I call safe.

Once home I ate a pomegranate. This is a great food to eat if you eat out of boredom. It keeps you busy. =)

I promise their will be a meal recipe for one soon!

Not 1 but 40!

Today was a different story. I needed to not only cook for one, but cook for 40. I was in charge of soups and salads at my church's Progressive dinner. I made a homemade split pea soup and a harvest salad. Also there was a pumpkin soup on sale at the grocery store and I bought a few conatiners of that.

Harvest Salad: Mixed Spring greens, 1 bartlett pear chopped, 1 bosc pear chopped, 1 green apple choppped, swiss cheese cubed, feta, red grapes cut in 1/2, green onion thin slices. For the dressing: squeeze one lemon, mixed in some grapfruit juice and salad oil. Cracked sea salt and pepper.


No leftovers to eat for tomorrow.

I am an Army wife, a mother and a lover of fine food. Unfortunately my children are not lovers of fine food and my husband is in VA eating in a hotel room. Soon it will be deployment and then maybe many late nights of not making it home for dinner. I know I should cook like our parents did and eat what the kids eat. Easier said than done. I have one child with Autism who refuses to touch vegetables and fruit so I have to puree and hide them. Another child who only likes fruits and vegetables and all three hate their food mixed. So there goes the casserole idea. Honestly, my taste buds are a little more refined than box mac and cheese and tacos for dinner every night.

I have searched online for healthy recipes for one. Guess what? I cannot find any good ones. I decided to create this blog in order to help others who are coming across the same problems. A few nights a week I will experiment and post the recipes that are a success.

As for tonight, I am about to make grilled cheese and canned soup for the kids. Me??? I am cutting up some grapes, green apples, smoked gouda. a few crackers and pouring a glass of wine.
